After being totally inspired by a post on the ED Recipe discussion I discovered Elana's Pantry and what a find! An amazing cook who is now a celiac and is devoted to finding delicious wheat and gluten free recipes. A lot of them are also sugar-free so pretty darn perfect for us ED-ers!
So armed with a list as long as my arm I shopped till I dropped this morning and spent a small fortune in Julian Graves, Holland & Barrett and Waitrose and am now stocked up on for some ED baking. Started off with some bran-muffins made with almond flour (that's ground almonds to you and I) flax-seed, dates, olive oil, raisins and seeds. I have never baked before and they are blimmin' lovely! Posted about them on the ED Recipe discussion and was quickly told to watch it as they are full of dried fruit so lots of carbs! This is the first dried fruit I've had since 5th June so I've enjoyed them today (4 to be exact!!!) but will limit myself to one a day after that...don't want to undo all my previous saintly goodness! Just feels v nice to have that sort of texture again. Talking of texture also got some raw crackers today made from brazil nuts which I had for lunch with mashed avocado and Parma ham absolutely amazing! Again the texture is something I've really missed! So I guess I've not been completely ED challenge compliant but not dropped the ball just maybe had more high-carbs than I should have.
Here's my food:
B'fast: smoked salmon and scrambled egg
Lunch: raw cracker, mashed avocado & Parma ham
Dinner: Dax's macadamia crusted salmon, new pots with fresh mint from my garden, steamed carrots & green beans and a new veg I've never tried before called sea-aster..strange taste not for me but my husband liked it.
Snacks: nuts, fruit and of course my v delicious muffins!
Early to bed again tonight, got a busy day tomorrow to look forward to, RJ swim lesson, then lunch and lavender farm with my mum and aunty....lovely!
